My mornings don’t usually allow time to whip up something very extravagant, but on the weekends I love to experiment with different pancake recipes. This has got to be one of the most delicious ways to satisfy a sweet brunch craving. While also getting your greens, grains, protein, and healthy fats in every bite. If you don’t have matcha not to worry - you can absolutely leave out or even sub for any flavorless or vanilla flavored protein powder. Give this one a go! Prep time: 5 minutes Total time: 25 minutes Yeilds approx. 8-9 small pancakes What you’ll need: 1/2 banana 1 hearty handful of spinach 1 egg 1/3 cup gluten free oats 1/8 tsp vanilla extract 1-2 tsp matcha powder 1/8 tsp baking powder 1/8 tsp baking soda 2 tbsp almond milk Dash of cinnamon Optional add-ins: 1 tbsp flax meal 1 scoop vanilla protein or 1 scoop collagen powder Optional Toppings: banana slices, berries, sunflower seed butter, hemp seeds, chia seeds What you’ll need to do: 1. Mix well all ingredients by hand or in your blender. 2. Heat a nonstick pan {easiest for pancakes}, or you can use a well seasoned cast iron. 3. Add a little bit of evoo or coconut oil if you’re not using a nonstick pan. 4. Pour about 1/4 cup of batter to make small pancakes, about 3-4”. 5. Watch for bubbles and flip! I stacked with a little bit of greek yogurt in between each pancake, but you do you! Happy brunching, Molly
